Ceylon Cinnamon French Toast

Golden, crisp-edged French toast dusted with Ceylon cinnamon. The batter is simple — eggs, milk, vanilla, and cinnamon — but the quality of the cinnamon makes a real difference. Ceylon's natural sweetness means you need very little maple syrup at the end.

Ingredients

  • 4 thick slices brioche or white bread
  • 2 eggs
  • 80ml whole milk
  • ¾ tsp Ceylon cinnamon powder
  • 1 tsp vanilla extract
  • 1 tbsp sugar
  • Pinch of salt
  • Butter for frying
  • To serve: maple syrup, fresh berries, extra Ceylon cinnamon

Method

Step 1. Whisk together the eggs, milk, Ceylon cinnamon, vanilla, sugar, and salt in a shallow bowl until well combined.

Step 2. Melt a knob of butter in a non-stick pan over medium heat.

Step 3. Dip each slice of bread in the egg mixture, letting it soak for about 10 seconds per side.

Step 4. Cook in the buttered pan for 2 to 3 minutes per side, until deeply golden and crisp at the edges.

Step 5. Serve immediately, dusted with a pinch of extra Ceylon cinnamon, fresh berries, and a small drizzle of maple syrup.
