A crumble with a buttery, oat topping and a filling of spiced apple and cloves. Ceylon cinnamon goes into both the filling and the topping for layered warmth. The cloves add a deep, almost festive note. This is the kind of thing that smells like a proper kitchen.

For the crumble topping:
Step 1. Preheat oven to 180°C (350°F). Toss the apple slices with cinnamon, brown sugar, and lemon juice. Add the whole cloves. Pour into a baking dish (about 20cm x 28cm).
Step 2. Make the crumble: combine the flour, oats, sugar, cinnamon, and salt. Add the cold butter and rub with your fingertips until the mixture resembles coarse breadcrumbs with some larger clumps. Do not overwork it.
Step 3. Spread the crumble evenly over the apple filling.
Step 4. Bake for 30 to 35 minutes until the topping is golden and the filling is bubbling at the edges.
Step 5. Remove the cloves before serving. Best with cold cream, custard, or a scoop of vanilla ice cream.
Hand-harvested from Sri Lanka's spice regions. Three cloves in the apple filling make the whole dish taste more complex.
