Creamy oat porridge simmered with a Ceylon cinnamon stick, finished with a drizzle of honey and sliced pear. One of the simplest possible breakfasts, made noticeably better by using a proper cinnamon stick instead of powder from a generic jar.

2Step 1. Combine the oats, milk, cinnamon stick, and salt in a small saucepan. Place over medium heat.
Step 2. Stir continuously as it heats. Once it begins to bubble, reduce to low.
Step 3. Cook for 5 to 7 minutes, stirring regularly, until the porridge is thick and creamy. Add a splash more milk if you prefer a looser consistency.
Step 4. Remove the cinnamon stick. Divide into bowls.
Step 5. Top with sliced pear, a drizzle of honey, and a small pinch of Ceylon cinnamon powder. Eat immediately.
Save the stick
A good quality Ceylon cinnamon stick can be rinsed and reused 2 to 3 times. After porridge, let it dry and use it again tomorrow in tea or another bowl. The second infusion is a little more subtle but still distinctly fragrant.
